Dessert in less than 30 minutes!
Call it Milk Cake/Milk Barfi/Milk Fudge – this incredibly delicious sweet fudge made is one of those Indian milk mithai recipes that you can make in an jiffy. The final look of milk cake is so enticing that it is perfect to serve to your guests, specially during the festive season. Making traditional sweets often involves days or sometimes weeks of preparation, however this milk cake can actually be made in less than 30 mins using everyday ingredients. Overall Cooking Time : 30 minutes
What You Require:
3 measuring cups milk powder
1 & 3/4 cups refined white sugar
600ml cream
Almond flakes for garnish
Large/deep bowl
Heat resistant spatula
Method:
Stage 1: Mix all the ingredients in a bowl and microwave it for 5 mins.
The cooking time will vary according to the wattage of your microwave. For instance, my micro is a 1100w one – so the cooking times I have stated are what I have experienced.
A large/pot is needed because the mixture tends to ‘rise’ considerably whilst initially cooking. In a ‘squat’ pot – the mixture may boil over and create a mess in your oven.
This is what it looked like after all ingredients were mixed:
Stage 2: After 8 minutes of cooking: First time I put it in for 5 mins – remove, stir well, scraping down sides and replace for another 3 mins. After this I cook it for 2 mins at a time. Stirring and scraping down sides after each 1 or 3 mins. If your micro is a lower wattage micro, you could even put it in for 4 mins intervals.
Stage 3: This is what is looks like after 10 minutes of cooking
Stage 4 : After 15-16 mins of cooking
Stage 5 : From this stage onwards it shouldn’t ‘rise up the sides’ of the bowls – because basically the milk fats have ‘broken down’ into more solids.
Stage 6 : This is about 25 mins in
Stage 7 : Ready to plate up : Allow to cool slightly. And with a silicone spatula make the ‘cuts’. You could add flakes almonds if desired.
