Happy Vijaya Dashami – a day that marks the victory of the Mother Goddess over evil demons and is celebrated by Indians worldwide by observing social gatherings and offering sweets to relatives, friends and neighbours. The festivity also marks the beginning of the harvest season and prayers are said to invoke blessings from Mother Earth for a good harvest, peace and prosperity to all.

So it should come as no surprise that today’s recipe feature is something special that can only be found in mom’s cooking, bursting with goodness, and oozing with a whole lot of the secret ingredient – Love!

My Mom, Chandrakanta Dhar (who hails from a Kashmiri Pandit family) is the best cook in the world. If you think I’m biased, ask my relatives, friends and family, who are blown away by every food item she dishes out of her kitchen, devour every bite on the plate and literally long to eat her food again and again. Her recipes however are a bit like a Bake-Off challenge: no oven temperatures and a very lean method using simple ingredients from the pantry. I guess it harks back to a time when our cooking instincts were more honed.

The recipe we are sharing today is Mom’s Water Chestnut Flour Halwa – ooey-gooey, scoops of heaven, melt-in-mouth wonder and a dessert we are up for anytime, any day, sinning in the most delightful way. Warm from the stove, this dessert is made by mixing water chestnut flour with clarified butter, milk, and sugar and studded with almonds, raisins, and cashews to add a bit of crunch to this festive treat. Go ahead and feast your eyes on this extremely comforting, highly satisfying, family favourite fall dessert!

Ingredients:

250 g water chestnut flour (singhara flour)
10 – 12 almonds (blanched and sliced)
10-12 raisins and cashews and 4 more almonds (blanched and halved)
7-8 tablespoons of sugar ( or as per taste)
1 teaspoon powdered green cardamom
4 tablespoons ghee
2 cups water
2 cups milk
Garnish with the dry fruits before serving
