EASY STOVETOP APPLE CAKE

This must be the simplest apple cake ever! You don’t need any special ingredients for this recipe. Chances are you’ll have everything right there in your pantry to make this holiday dessert.

Ingredients
2 apples – I had Red Delicious variety in my fruit basket
1 egg – at room temperature
140 ml milk – at room temperature
150g refined flour
60 g sugar
60 ml olive oil
Pinch of salt
5 ml vanilla essence
1 tbsp white vinegar
8 g baking powder
½ tsp cinnamon powder
½ tsp nutmeg powder – optional

Method:

1. Choose a thick bottomed frying pan. I have three sizes, an 8”, a 10” and an 11”, so I chose the 10”. In retrospect, a slightly smaller pan would have given me more depth, so if you have a 9” frying pan, I think it should be perfect.

2. Brush the pan thoroughly with butter. Sprinkle some of the sugar and set aside.

3. Whisk the whole egg till light and fluffy. Add salt, sugar, vanilla and oil and whisk till well combined. Add flour, milk, vinegar and baking powder – I alternated milk and flour to get the consistency right. Leave the last bit of milk for the very end, and see if you need it at all. My milk was skim, so it was lighter and more liquid. If you use full fat milk, it would be thicker in the batter. Mix till the batter is smooth.

4. Core and slice the apples. I cut the apples into roundels and left the skin on for that bit of colour. You could cut them in halves as well. Spread the slices on the buttered frying pan. Pour the batter over it.

5. Cover with a lid and cook it on medium heat for 10 minutes, and then for 10 minutes more on low heat. Be careful about the heat, as the sugar is caramelizing at the bottom of the pan. Once the cake is done, it should spring back when touched.

6. Overturn it gently on to a plate. Then slip it back into the pan for another 5 minutes without the lid. Turn on to a plate and serve. I sprinkled a bit of cinnamon powder on top, you could sprinkle caster sugar as well, and serve it with whipped cream or ice cream. Enjoy!
