If you’re already cooking with mushrooms in your kitchen, keep it up, because they have benefits (high nutritional value and antioxidant powerhouse) way beyond making that stir-fry extra tasty. Brimming with earthy flavours, they are great in a seasonal salad, a soothing soup or tucked up in a comforting calzone. Here is the recipe of the comforting creamy mushroom soup that we love pairing with a good Caesar Salad.
Prep Time – 10 mins
Cook Time – 25 mins
Serves – 4
Ingredients
90g butter
2 medium onions roughly chopped
1 garlic clove, crushed
500g mushrooms, finely chopped (chestnut or button mushrooms work well)
2 tbsp plain flour
1 litre hot chicken/vegetable stock
1 bay leaf
4 tbsp single cream
Handful of roughly chopped Parsley, to serve (optional)
Salt and Pepper for seasoning
Method
Heat the butter in a large saucepan and cook the onions and garlic until soft but not browned
Add the mushrooms and cook over a high heat until softened. Sprinkle over the flour and stir to combine. Pour in the chicken/vegetable stock, bring the mixture to the boil, then add the bay leaf and simmer for about 10 mins.
Remove and discard the bay leaf, then remove the mushroom mixture from the heat and blitz using a hand blender until smooth. Gently reheat the soup and stir through the cream. Sprinkle some parsley and season with salt and freshly ground black pepper and serve.
