Even the thought of bowl of green indulgence can suddenly add so much colour, spice, and flavor to an otherwise dull day. That said, another reason that compels us to feature a recipe by using this green vegetable as the main ingredient is because of its nutritional makeup. Studies suggest that Broccoli is not just a good source of fibre and protein, but is packed with vitamins (A,C, and E), minerals, and tons of antioxidants that acting as an agent to boost immunity. The easiest way to make it a valuable addition to a balanced diet is by adding broccoli to salads, pastas, and Asian curries. But our all-time favorite dish to jazz up brunch or dinner is Cream of Broccoli Soup.

Ingredients:
3 cups chopped broccoli florets and stems
2 tablespoons butter (For a healthier version use 2 tablespoons of Olive Oil)
1/2 cup cream (For a healthier version swap the cream with milk)
1 onion, chopped
1 teaspoon chopped garlic
1 potato, peeled and chopped
Salt, Pepper and Oregano/Nutmeg, to taste
6 cups fresh or canned warm vegetable/chicken stock
Method:
In a large pot, melt butter and add chopped garlic. Then add the onions and caramelize them over medium to high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Stir in broccoli and return to a simmer. When potato and broccoli are tender, puree in batches in a blender or food processor. Return to pot and add cream/milk. Season with salt, pepper, and oregano or nutmeg and serve warm.
