Rich in immune boosting Vitamin A and beta carotene, sweet potatoes are a super versatile vegetable. Add them to curries, roast them in the oven, poke a few holes and microwave them for a quick side dish, top them with peanut butter, almond butter, fruit, yogurt, poached eggs, or guacamole. As we kick-start yet another stay-at-home week, we thought of sharing a delicious but extremely easy recipe that you can make (or rather bake) in the middle of those work zoom calls. If you wish to have a light lunch then pair it with a bowl of soup or a chicken sandwich. If you’re having this for brunch then or top it with cheddar cheese and/or bacon bites, we guarantee you’ll end up licking your plate!

Serves – 4
Ingredients
4 sweet potatoes, scrubbed clean
4 tbsp. butter
Salt (as per taste)
Freshly ground black pepper
Bacon Bites (optional)
Cheese of your choice – we prefer cheddar (optional)
Method
Preheat oven to 425º. On a baking sheet, prick sweet potatoes all over with a fork.
Bake until tender, 45 to 50 minutes.
If you are pressed for time then just bake it in the microwave for 5 – 7 minutes
Let it cool, and then split the tops open with a knife and top with a pat of butter. You could top it with cheese of your choice and/or bacon bites.
Season with salt and pepper before serving.
