One of America’s favourite baked treats, are deliciously chewy, dense and fudgy, moist and warm, with a rich chocolate flavor. There are thousands of recipes, both “cake” types and “fudge” types. In the modern recipes, there is a number of brownie varieties with added almonds, walnuts, pecans, chocolate chips, or even chili powder.
Where did it come from? USA. There are numerous legends surrounding the origin of the brownie and while we may not for sure who the real inventor was, but what we do know is that the first chocolate brownie recipe appeared in the 1896 The Boston Cooking-School Cook Book, written by Fannie Merritt Farmer. However what really popularized the brownies were instant, boxed mixes from the 1950s made by two brands – Duncan Hines and Betty Crocker.

Ingredients (how much)
125 g all-purpose flour
1/2 tsp. kosher salt
25 g unsweetened cocoa powder (Buy them here)
200 g dark chocolate chips, divided (Buy them here)
100 g butter, cut into 1″ pieces
150 g granulated sugar
50 g brown sugar (Buy them here)
2-3 whole eggs, at room temperature
1 tsp vanilla extract
Crushed almonds for the garnish (Buy them here)
Method:
1. Preheat oven to 180°C. Butter a baking dish and line with parchment paper. In a bowl, whisk together flour, salt, and cocoa powder.
2. Create a double-boiler by setting a large bowl over a saucepan of simmering water. Add butter and 150 g chocolate chips to bowl and heat till the chocolate and butter are completely melted. Keep stirring to ensure no lump is formed. Turn off the heat. Then whisk in sugar and stir until mixed.
3. Next add eggs one at a time, stirring well between each addition, and then add in vanilla essence. Add flour mixture to chocolate mixture and fold in dry ingredients with a rubber spatula until just combined. Mix in remaining chocolate chips.
4. Pour batter into the baking dish. Bake for 30 minutes until a knife inserted into center of brownies comes out with a few moist crumbs, about 30 minutes. Let it cool completely.
5.Garnish with Almonds before serving. You may substitute almonds with Walnuts/Pecan nuts
Best accompaniments – A glass of cold milk or a scoop of Vanilla ice cream
