Radisson Mumbai Goregaon invites food lovers to experience the captivating flavors of Vietnam at its award-winning Pan-Asian restaurant, Goma. From November 8 to 17, the restaurant will host the “Pho and Beyond” Vietnamese Food Festival, promising an immersive taste of Vietnamese cuisine in Mumbai.

Vietnamese cuisine is celebrated for its harmony of flavors, combining fresh herbs, aromatic spices, and vibrant textures. The festival at Goma will present a diverse selection of authentic dishes crafted by Chef Sadik Khan, known for his expertise in Asian culinary traditions. Chef Khan’s menu is designed to showcase the essence of Vietnamese cooking, offering guests a journey through the country’s rich culinary heritage.

Unique menu items will include Goi Du Du Voi Chanh Day, a refreshing raw papaya salad with passion fruit dressing, and Goi Cuon Chay, light summer rolls filled with vegetables and chives. Other highlights include Banh Bap, corn cakes paired with a spiced plum sauce, and Dau Dua Xao Toi, a stir-fried haricot bean dish flavored with garlic and coriander.

For those seeking a taste of Vietnam’s coastal flavors, dishes like Cua Lot Chien Gion Sot Man, a crispy soft-shell crab with chili plum sauce, are also available. Goma’s culinary team has carefully crafted each dish to represent Vietnam’s traditional cooking techniques and fresh ingredients. Chef Sadik Khan of Pan Asian Restaurant Goma at the Radisson Goregaon in Mumbai also shared a special recipe for Pho, a classic Vietnamese dish.

Pho is a traditional Vietnamese soup, originally from North Vietnam and inspired by the French word feu (fire). Known for its aromatic broth, it features rice noodles and is typically served with fresh herbs, lime, bean sprouts, and chili peppers for added flavor.

Ingredients

Broth:

  • 10 cups vegetable stock
  • 1 onion, peeled and halved
  • ¼ cup soy sauce
  • 8 cloves garlic, coarsely chopped
  • 2 cinnamon sticks (3-inch)
  • 2 teaspoons ground ginger
  • 2 star anise pods
  • 2 bay leaves

Soup:

  • 16 oz thin rice noodles
  • 2 tbsp vegetable oil
  • 2 (14 oz) firm tofu blocks, drained and sliced into ¼-inch pieces
  • 8 oz enoki mushrooms
  • 4 scallions, sliced
  • ½ cup chopped cilantro
  • 1 lime, cut into wedges
  • ¼ cup mung bean sprouts
  • ¼ cup Thai basil leaves, torn

Instructions

  1. Prepare Broth: Combine stock, onion, soy sauce, garlic, cinnamon, ginger, star anise, and bay leaves in a pot. Bring to a boil, then reduce heat, cover, and simmer for 30-45 minutes. Strain and keep hot.
  2. Prepare Noodles: Soak noodles in boiling water for 8-10 minutes until soft. Drain and rinse.
  3. Cook Tofu: Heat oil in a skillet over medium-high heat. Fry tofu slices until golden, about 6 minutes per side.
  4. Assemble Soup: Add fried tofu and mushrooms to the hot broth to warm, then divide among bowls with noodles. Top with scallions and cilantro.
  5. Serve Garnishes: Provide lime wedges, bean sprouts, and basil for customizing each bowl.
