This year, Executive Chef Kamlesh Rawat of Fairfield by Marriott, Mumbai, presents a unique fusion dessert—Lotus Biscoff Cheesecake with Thandai. A no-bake delight, this recipe beautifully blends the caramelized richness of Lotus Biscoff with the festive essence of Thandai, making it a perfect centerpiece for celebrations or a special treat for any occasion.
Ingredients
For the Biscuit Base:
- 300g Lotus Biscoff biscuits
- 110g unsalted butter (melted)
For the Cheesecake Filling:
- 600g full-fat cream cheese
- 100g icing sugar
- 300ml double cream
- 200g Lotus Biscoff spread (softened)
- 2-3 tbsp Thandai syrup or Thandai powder (adjust to taste)
Instructions
Step 1: Prepare the Biscuit Base
- Crush the Lotus Biscoff biscuits into a fine but slightly crumbly texture using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
- Melt the butter and mix it with the crushed biscuits until well combined.
- Line a springform cake tin with parchment paper, then pour the biscuit mixture into the tin. Press it down firmly with the back of a spoon to form an even base.
- Refrigerate the base for at least 1 hour to set.
Step 2: Make the Cheesecake Filling
- In a mixing bowl, whisk the cream cheese and icing sugar until smooth and lump-free using an electric whisk on medium speed.
- Add the double cream, softened Lotus Biscoff spread, and Thandai syrup or powder. Continue whisking until the mixture thickens and forms soft peaks.
- Once the filling reaches a creamy consistency, pour it over the chilled biscuit base and spread evenly with a spatula.
Step 3: Chill and Serve
- Cover the cheesecake with cling film and refrigerate for at least 4-6 hours, preferably overnight, to achieve the best texture.
- Once set, carefully remove the cheesecake from the tin and garnish with crushed Biscoff biscuits, a drizzle of melted Biscoff spread, or a sprinkle of Thandai powder.
- Slice and serve chilled, savoring the rich flavors of this fusion delight.
Tips for the Perfect Cheesecake:
- For a stronger Thandai flavor, increase the quantity of Thandai syrup or powder.
- If a firmer texture is preferred, freeze the cheesecake for an hour before serving.
