One of The World’s 50 Best Hotels to welcome internationally renowned restaurant to its dining collection in 2025.

Atlantis Dubai is teaming up with the renowned luxury hospitality brand Major Food Group to bring the iconic restaurant CARBONE to Atlantis The Royal in the first quarter of 2025. Vanity Fair has dubbed CARBONE ‘the most celebrity-studded restaurant on earth,’ and this global phenomenon will debut its world-class, New York-style Italian cuisine in Dubai for the first time.

When CARBONE first opened in downtown Manhattan just over a decade ago, it was instantly hailed as a classic, infusing the fine dining scene with much-needed energy and soul. The New Yorker praised the food as “absolutely perfect,” while The New York Times described the restaurant as “a fancy red-sauce joint as directed by Quentin Tarantino,” combining technical prowess that can make you giddy with an instinct for entertainment that leaves other restaurants feeling earnest and unimaginative. Quickly, CARBONE expanded globally, establishing itself as one of the most influential contemporary restaurants in the world.

The cuisine at CARBONE honors the storied legacy of mid-century New York-style Italian restaurants, using top-tier techniques to elevate classic dishes like Caesar Salad, Linguini Vongole, Chicken Scarpariello, and Veal Parmesan to new heights. These renowned favorites, including the sensational Spicy Rigatoni, will be featured on the Dubai menu. Guests will be served by tuxedo-clad captains in a sprawling dining room designed to evoke 1950s New York. The stunning space will boast velvety jewel-tone nooks, damask-upholstered walls adorned with Venetian glass mirrors, a curated collection of fine artwork, and a vibrant terrace.

CARBONE Dubai will be the ninth location in Major Food Group’s (MFG) portfolio, joining outposts in Hong Kong, Las Vegas, Miami, Dallas, Doha, Riyadh, and two in New York City. Founded by Mario Carbone, Jeff Zalaznick, and Rich Torrisi, MFG now boasts over 50 establishments, including restaurants, bars, private clubs, and hotels. The luxury brand is renowned for creating spaces that attract a diverse audience—from neighborhood regulars to prominent figures in media, business, and entertainment—thanks to their blend of glamour, meticulous execution, exceptional hospitality, and design collaborations with industry leaders.
