Painted in hues of history, artistry, passion and sprinkled with flavors of pimento (paprika), azafran (saffron), and olives, Spain has a distinct and vibrant character that makes it one of the most favored holiday destinations in the world. While the culinary scene is best defined by seafood and chorizo, you’d be surprised to know that there are plenty of meatless options for vegetarians. You just need to know what to order. Today’s dish in focus is Berenjenas con miel, street food that is especially popular in Malaga, a port city in Spain. The dish consists of slices or strips of batter-fried eggplant, drizzled with honey and sprinkled with sesame seeds. While the dish is usually served as tapas, but can also be enjoyed as a side dish with two of Spain’s popular tomato-based cold soups and vegetarian food salmorejo and gazpacho.
