Recipe Courtesy Of Madhu Lahoty – Carrot Dip
Carrots are the perfect snack — crunchy, full of nutrients, low in calories, and sweet.
They’re associated with heart and eye health, improved digestion, and even weight loss.
This root vegetable comes in several colors, sizes, and shapes, all of which are great additions to a healthy diet.
Interestingly carrots can be used in a soup or salad or even a sweet dish.
This is a unique dip I have made using carrots! I am sure you will find it delicious.
Ingredients
1 kg carrots washed peeled and juiced and strained
Topping
8-10 cloves of garlic peeled and finely chopped and dry roasted till crunchy
1/4 tsp chili flakes
3 tbsp finely chopped spring onion leaves
Few raisins/cranberries, chopped
A little zest of lime
1 tsp lime juice
Salt
Method
Heat the pan into which the carrot juice is poured
Let this be reduced to almost 60%, stirring it often
Take the pan off the flame
Let it cool
Add the lime juice and a little salt
The topping
Mix all the ingredients together (except the lime juice )
Assemble
Take a nice glass jar
Pour the reduced carrot juice
Add a lavish portion of the topping to it
And serve it as a condiment with roasted potato wedges/wraps or with salad sticks!
