Tarte Normande

Tarte Normande (French version of the American Apple Pie) is a French classic where apples, apple brandy, cream, and butter are combined to make this simple yet elegant fall dessert.

Where did it come from? Normandy, a region famous not only for apples but also for its Calvados apple liqueur, both of which are essential ingredients of Tarte Normande (French Apple Pie)

Recipe: Tarter Normande (for 4-6 foodies)

Equipment required:    2 large bowls, baking dish, and an oven

What your fridge should have: butter, eggs, whipped cream

Ingredients (how much)

The Crust
100 g butter
200 g plain flour
1 egg yolk
1/4 tsp salt
2 tbsp cold water

The Filling
4 apples
30 ml Calvados apple brandy (Or cognac brandy flavoring that you can buy here on amazon)
2 eggs
1/2 cup heavy cream
1/4 cup sugar
1/2 cup ground almonds
A handful of sliced almonds

Method:

1. In a large bowl, mix the flour, butter, salt, egg yolk, and water to make the dough.

2. Roll it out and fit it into a 10-inch tart pan. Press the dough firmly into the sides and bottom of the pan.

3. Wrap the crust in plastic wrap and place in the freezer for at least 30 minutes.

4. Preheat the oven to (200°C). Place the unwrapped, frozen tart shell in the oven to bake for 10-12 minutes. Remove from the oven and allow to cool.

5. Peel the apples, cut them into quarters, and slice out the core. Slice each quarter into four slices. Beat the eggs until foamy. Beat in the sugar until the mixture thickens slightly, for a few minutes. Fold in ground almonds, heavy cream, and brandy.

6. Cover the tart shell with sliced apples and pour the custard mixture on top of the apples, and sprinkle the sliced almonds on top. Place the tart back in the oven and lower the temperature to about (190°C). Bake for 30-35 minutes.

7. Serve the Tarte Normande warm with a dollop of crème fraîche.
