Authentic Korean Bibimbap Over Saengchae (Raddish Salad)

South Korean cuisine (known generally as cuisine) has spread far and wide in recent years. In many western countries, barbecue and ramen are very popular with all kinds of foodies who probably don’t know much about the country of origin. A general scan of popular food menus will show two items present everywhere – bibimbap and kimchi (everyone knows this one).

While we will cover bibimbap later, today we are talking about a salad that is probably not as well known as the kimchi but is a close cousin. Saegchae is a salad made of different types of seasonal vegetables (radish or cucumber) and is a very simple accompaniment to most meals. It can also have other seasonal vegetables. The most popular one is the Mu-saengchae which is the radish salad (‘mu’ is radish in Korean). It is a simple salad to make – just julienne the radish, rain out the excess water of the radish using salt, and then add soy sauce, vinegar, and some salt if you need it. It is different from kimchi in that it uses fresh vegetables instead of fermented ones, and is quicker to make.

So, even if you are vegetarian and can’t enjoy most of the dishes (since they have some sort of meat or other), here is a good way to add a little bit of South Korea to your noodle lunch. For the more adventurous among you, there is also the option of listening to some K-pop while you are at it.
