One of the oldest types of bread in Serbia is definitely the Proja (Cheese Muffins). It has been in every Serbian home for centuries. Proja is a traditional Serbian cornbread made with a combination of cornmeal, salt, milk, beaten eggs, and butter or oil. After it has been baked in a pan, proja is typically cut into squares and served warm. It should be crusty on all sides. It’s often cooked fresh for family meals, then served hot from the oven. The Serbian national food can be served hot or cold with yogurt. Ground corn offers a lightly sweet foil to salty toppings, from salty kajmak cheese to a scattering of cracklings. Warm squares of Proja, are a favorite accompaniment to the country’s lush meat stews.
