Pretty much the uncontested national dish of Canada, this dish has its origins in the French-speaking Canadian province Quebec, somewhere in the 1950s, and traces the name to some phrase in French which associated making a mess with the French word poutine. The reason for this will become clear once you read about the way this dish is put together and take a look at the pictures.
Poutine is a pile of French fries (which, as any self-respecting French national will hotly argue about not being remotely French), covered with cheese curds (which are solid pieces of curdled milk) and drenched in brown gravy (made from corn starch, flour, butter and chicken and beef stock). Yes, no wonder the guy who coined the name related it to a mess. But what a delicious heart-warming mess. Finger licking delicious for those who are not too worried about table manners. For the rest, there are always forks! Any way you eat it, it is the ultimate comfort food to keep you cheerful during the harsh Canadian winters.
