How to Make a Classic Ratatouille | France

Ratatouille or Ratatouille Nicoise (official French name) is a colorful and extremely healthy classic French vegetarian, vegan, and gluten-free dish, traditionally made with simple, easily accessible fresh local produce: zucchini, eggplants, green and red peppers, tomatoes, onions, garlic, and parsley.

Where did it come from? Nice and Provencal regions of France

Perfect for –  a  light and healthy lunch or dinner. The leftover can be had for breakfast or packed into your kid’s lunchbox. We assure you the kids will love it, especially if they’ve watched Disney’s Ratatouille.

Prep + Cooking time: 45 mins

Recipe : Ratatouille (for 2 foodies)

Equipment required:  2 large pans, a baking dish, and an oven

Ingredients for Ratatouille

1 large or 2 medium eggplants cut lengthways and diced
2 small zucchini finely sliced
1/2 red or yellow bell pepper chopped into bite-size chunks
2 large blanched tomatoes peeled and diced
4 tbsp olive oil
1 onion finely chopped
2 garlic cloves minced
1 tsp red wine vinegar
1/2 tsp sugar
Salt to taste
Fresh basil leaves for garnish

Method to Make Ratatouille:

1. To prepare the tomatoes, make a small cross on the base of each of the tomatoes, put them in a bowl, and pour boiling water over, leave for 20 secs, then remove. Pour the water away, replace the tomatoes and cover with cold water. Leave to cool, then peel the skinned tomatoes and keep them aside.

2. In a large pan heat the oil over medium flame. Throw in the eggplants and cook them till soft and brown on each side. Set them aside.

3. Fry the zucchinis in another tbsp oil until golden on both sides. Follow the same procedure with the peppers. Don’t overcook the vegetables.

4. In another pan cook the onion till soft. Add the garlic. Stir in red wine vinegar and sugar. Next, add in the tomatoes and basil.

5. Return the vegetables to the pan with some salt and pepper and cook for 5 mins.

6. Bake it for 10 mins in a pre-heated oven. Serve with basil.

Best accompaniments – Serve ratatouille, with slices of toasted baguette. To make it a more wholesome meal, serve it with a bowl of French onion soup (Soupe à l’oignon) or simply pour it over freshly made pasta. If you are having the leftover for breakfast then pair it with freshly baked croissants your favorite cup of joe.
