Armenia is a destination where you will be intrigued by history, awed by monuments, amazed by the landscape, and charmed by down-to-earth locals. It’s not an easy place to explore – roads are rough, transport is often hard to navigate and those who don’t speak Armenian or Russian may find communication difficult – but traveling here is as rewarding as it is revelatory. But if there’s one thing that could make your journey smooth and comforting, (the kind of comfort provided by a Cashmere Pashmina on a chilly night) then it’s a bowl of Arganak – a type of traditional Armenian soup that is based on chicken broth and meatballs. If you are familiar with Kashmiri cuisine, then this one will remind you of Gushtaba (a Kashmiri delicacy where lamb meatballs are cooked with onions, cloves, cardamom, fennel, ginger, garlic, and mint, plus yogurt to make a smooth, savory, nectar gravy). Arganak on the other hand goes easy on the spices and is typically made with meatballs consisting of seasoned ground meat, cooked rice, and onions which are cooked in a chicken broth flavored with lemon juice and egg yolks. Warm and filling, the chicken soup with meatballs is usually consumed right away, garnished with some freshly chopped parsley on top.
