7 Boxing Day Meal Ideas With Christmas Leftovers

We love the idea of a gastronomic extravaganza when it comes to a Holiday Dinner. But you know what feels even better? Saying no to wastage and turning the leftover turkey and ham cold cuts, potatoes, pies, and puddings, into truly delicious post-Christmas dinners. While it’s very difficult to choose a favorite but we like the sound of a hearty deep-filled turkey and ham quiche or a creamy sprout and leak pasta, maybe even a ham carbonara and to finish it off a chocolate Sunday with chinks of Christmas pudding drizzled with an orange or cranberry sauce and topped with chopped hazelnuts or walnuts.
Whether you are gearing up for a Boxing day shopping spree or planning to Netflix and chill, or you have friends and family traveling in and out of town, everyone will be delighted to wake up the day after Christmas to be served even more delicious bites because who doesn’t want the holiday cheer to last a wee bit longer.

1. Turkey or Chicken Sandwich: The rule for the day after Christmas: NO COOKING. Seriously, with all of that leftover turkey or roast chicken, stuffing, and creamy mashed potatoes, it would be a crime not to make this sandwich for boxing day.

2. Ham and Vegetable Casserole: This recipe is a great way to use up any leftover ham and/or veggies you have from Christmas dinner. Then all is left is to cook up some pasta, open a can of soup, and shred some cheese on boxing day.

3. Turkey, Chicken, or Mushroom Pot Pie : This is one of the best ways to enjoy leftover roast turkey/chicken/mushroom. A creamy filling loaded with turkey/chicken/mushroom and veggies is tucked inside a flaky pie crust (easily available in super markets) and baked until golden and bubbly!

4. Turkey/Roast Chicken Pizza : Turkey/Roast Chicken Pizza: For this recipe, first make your own pizza dough or if you are too tired from the Thanksgiving cooking, just get the pizza base from the super market. Use the gravy as pizza sauce and top it with leftover turkey or roast chicken, mashed potatoes, vegetables, and drizzle a bit of leftover cranberry sauce. Sprinkle some mozzarella cheese and bake it in the oven. The kids will love it too.

5. Turkey/Chicken and Mashed Potato Croquette: Add the leftover mashed potato to shredded turkey/roast chicken. Season with salt and pepper. Add a bit of corn flour to hold the mixture together. Roll the mixture into round balls. Dip them in eggs and coat it with bread crumbs deep fry them. 

6. Christmas Pudding Icecream : Christmas pudding freezes well and can be turned into an ice cream as easily as stirring some pieces into fresh ice cream or custard (home made or store bought), and you can enjoy the holiday cheer for at least week after Christmas.

7. Baked Apples Stuffed with Baked Apples: For a lighter dessert option, serve baked apples with stuffing of Christmas pudding. They’re so easy to make – and if you crave more indulgence, pour over lots of custard or fresh double cream.
