Perfect for a healthy lunch or dinner, here is another special recipe from guest foodie and home chef Rohini Chandra from Mumbai. Inspired by the flavors of Vietnam, this dish is nutritious, delicious, and easy to cook.
Ingredients Vietnamese Style Veggie Noodles:
Lemongrass stalk – 1 chopped fine
Green and red chili – 2 each
Garlic cloves – 4
Light Soy sauce -2 tbs
Sesame oil 2-3 tbs
Lemon juice – 1 lemon
Corriander leaves – 2 tbs
Assorted sliced bell peppers (red green yellow) – 1.5 cups
Roasted peanuts crushed or whole – 1 tbs
Egg noodles 250 gms boiled and drained as per instructions (You may use veg noodles as well)
Eggs boiled a d cut in half -2 (Avoid if you are making the vegetarian version)
Method Vietnamese Style Veggie Noodles:
Cook noodles in salt, boiling water. Drain well and keep aside.
Using a mortar and pestle make a smooth paste of the lemongrass, garlic, and chilies
Place the garlic ginger lemongrass paste in a bowl and add lemon juice and 1/2 the sesame oil and allow it to rest.
Heat the remaining oil in a large wok.
Add peppers and toss to coat with oil. Don’t overcook the peppers. About 5 mins on high heat should be enough. Take out the peppers and keep them aside.
Keep the wok on the gas, add the soy, the prepared garlic lemongrass mix, the drained noodles, and toss. Cook till it all comes together.
Garnish with coriander leaves peanuts and serve with boiled eggs.
