Finland – the tiny little country which is famous for so many things and Christmas. The ‘happiest’ country in the world, this nation counts among some of its well-known tourist attractions the following – the breath-taking lap lands, the Northern Lights, and its most famous resident – Santa Claus (yes, he actually has his home there). It is also home to many cutting-edge technology companies, not surprising because it has one of the best education systems in the world. Nokia, until recently a giant in the mobile telephony space originated in Finland. Plenty to be happy about, we should think?
Finland also has an interesting array of food for the foodie, and a lot of it is centered around seafood, Today, however, we will talk about a very vegetarian dish – the ‘Rosolli’ which is the Finnish beetroot salad. A very simple dish consisting of beetroots, carrots, potatoes, and onions. It is made a little tart by adding tart apples and pickled cucumbers or gherkins. The dressing is again a mix of sour cream, a little vinegar, and beetroot juice – which gives the dressing a pink color.
Not much is known about the history of the dish (must be a secret the Finns don’t like to share) but one thing well known about this dish is that it is a must at Christmas dinner at every home. But, we don’t have to wait till Christmas to savor this dish – it seems the perfect antidote to a grueling Indian summer afternoon. So, why not try it with your next lunch?
