What’s better than Tacos? Loaded Tacos! These are fun to make, perfect for a light weeknight dinner or even as an appetizer if your weekend plan is to Netflix and Chill. You can pretty much top these corn tortilla taco shells with seasoned ground meat, steak, vegetables, grated cheese, and all the taco fixings you love; like lettuce, tomatoes, and black olives.
Here’s my Loaded Tacos recipe that’s a hit with my friends coast to coast from San Francisco to New York!
Ingredients:
For the shell
Masa Harina – 2 cups (a special corn flour available in the Mexican section of a supermarket)
Sea Salt
Warm water – 1 to 2 cups
Method:
- Mix together the above ingredients and make a dough
- Roll out 5” round tortillas
- Drape over shell mold
- Bake in an oven , 375 degrees for 12 to 15 minutes
For the filling
Steak cut in strips (you can substitute with grilled chicken or grilled prawns of fish or grilled veggies )
Shredded lettuce
Chopped onions, tomatoes, cilantro
Pickled sliced jalapeños
Boiled red beans
Grated pepper jack cheese, mozzarella, sharp cheddar
Salsa (green and red), guacamole, sour cream
Finishing
- Take a crisp taco & start layering shredded lettuce, strips of steak, salsas, guacamole, sour cream, chopped onions, tomatoes, cilantro, pickled jalapeños and red beans.
