The Horiatiki Salad has an interesting story. It is actually a very recent addition to the Greek menu of popular dishes – in fact as recent as the 1960s (or thereabouts). The story goes that it was a creation of some very ‘imaginative’ restaurant owners who figured out a way to charge the tourists more than the government-mandated fixed prices of salads – by adding a slab of feta cheese to it and making it an entirely new dish. And, what do you know, the tourists loved it, never mind the price!
At its heart, it is just a hearty (and truly rustic) salad consisting of fresh summer produce widely available in Greece such as tomatoes, red onions, cucumbers, green peppers, and, of course, a liberal helping of feta cheese. Seasoned with dry oregano and salt (you may avoid the salt altogether since the feta cheese is quite salty by itself), and dressed with extra virgin olive oil and a little red wine vinegar. Some people also add pieces of rye bread to it, to soak up the juices and make the Horiatiki salad more chunky.
